The Holiday Bikini – How to Make It

WHere is a simplified version of a drink from the seasonal menu. It's a party-sized pre-mixed which is packed with flavours of the festive period, making it perfect for a festive gathering. Reserve the remaining cordial to use in breakfast cocktails, desserts, or to mix additional servings of this cocktail.

The Bikini Cocktail

Yields 10 guests

Ingredients for the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Premix (yields 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Method

For the Syrup: Place the listed items in a saucepan, heat until it reaches a gentle boil, mixing to dissolve. Then, turn off the heat and let it to cool down fully. Pour into a sterilised bottle, close it and refrigerate it in the fridge, where it will keep for about four weeks.

To make Batch Mix: Combine the specified liquid ingredients into one large bottle, let it rest for one hour, then filter it , ideally through cheesecloth, to ensure it's completely strained.

To serve: Pour 85ml from the cocktail base into your mixing glass containing ice, and agitate gently for a minute until cold. Strain into a cold coupe glass or a similar vessel, top with a few cranberries and complete it using a light spray with the mandarin essence above the glass.
